Ingredients for 4 people each
- 250 g yogurt (coconut or soy yogurt as a vegan alternative)
- 2 pinches of ginger powder
- 500 ml warm water
- 1 tbsp honey
- 2 pinches of natural vanilla
- Approx. 5 tbsp elderflower syrup
- ½ tsp cardamom powder
- 2 bunches of fresh elderflowers, if available
Preparation
- Combine yogurt, water, honey, and spices in a jug and blend vigorously with an immersion blender. Roughly pick the elderflowers and add them to the yogurt mixture. Let the flowers steep for 1 hour.
- Strain the lassi and season with syrup to taste.
- Pour the lassi into glasses and garnish with elderflowers, if desired.
