Ayurvedic Christmas Menu (1)

Ingredients for 4 people each

  • 3 medium cooked beetroots
  • 2 small apples
  • Juice of half a lemon
  • Salt, pepper
  • ½ tsp coriander powder
  • 1 pinch ground cinnamon
  • 1 pinch ground allspice
  • 1 pinch ground star anise
  • Fresh cress
  • Horseradish foam
  • 6 tbsp sour cream
  • 1 tbsp grated apple
  • a little lemon juice
  • 2 tbsp grated horseradish
  • Salt

Preparation
Peel beetroots and apples and cut into very small cubes. Mix with lemon juice, salt, pepper and spices and let rest for half an hour.
Mix the ingredients for the dip.

Serving
Fill the tartare into a ring and gently press it into the center of a plate. Top with a dollop of horseradish dip and sprinkle with fresh cress.
