Celery ravioli

Ingredients for 4 people each
- 100 g celery
- pepper, salt
- 3 pinches of coriander
- 2 tbsp whipping cream (soya cream or oat cream for a vegan version)
- nutmeg

Method
Cut the celeriac in half and use a vegetable slicer to cut 12 thin slices. Bring a little water to the boil in a wide saucepan with ajwain, sugar, salt and lemon juice, then cook the celery slices until al dente. This takes about 10 minutes. Drain the celery water and set aside. Rinse the celery slices under cold water. For the filling, chop the celery into small pieces and cook in the celery water until soft. Add the spices and whipped cream, then purée until very smooth.
Now place a little filling on the celery slices using two spoons and fold them into ravioli. Fry them in a frying pan with a little ghee or olive oil until golden brown on both sides.
