Steamed breakfast apples with Ayurvedic spices (recipe for 2 people)
A warm, nourishing Ayurvedic breakfast for body and mind
Gently steamed apples, harmoniously enhanced with saffron, ginger, cardamom, aniseed and other warming spices – this Ayurvedic breakfast dish is ideal for chilly mornings, aids digestion and ensures a soothing start to the day. Dried mulberries provide natural sweetness, whilst roasted nuts add texture and energy.
Ingredients (serves 2)
- 4 saffron threads
- 150 ml apple juice
- 4 tart apples
- 3 green cardamom pods
- 2 cloves
- 2 cm fresh ginger root
- ½ tsp aniseed
- ½ tsp turmeric
- Juice of ½ lemon
- 30 g dried black mulberries
- 2 tbsp almonds or walnuts
- 1 tsp ghee or coconut oil
- Optional: a dollop of whipped cream or white almond butter
Zubereitung
- Soak the saffron threads in apple juice and, ideally, leave them to infuse overnight in the fridge.
- Peel and core the apples, then cut them into small cubes. Finely chop the ginger.
- Gently heat the ghee or coconut oil in a saucepan. Lightly crush the cardamom pods and gently toast them in the ghee or coconut oil together with the cloves, star anise, turmeric and ginger until the spices release their aroma.
- Add the diced apples and mulberries, then deglaze with the saffron-infused apple juice and lemon juice...
- Serve with a dollop of whipped cream or almond butter, if desired, and enjoy whilst still warm.
Tipp
If you have a strong digestive fire (Agni), you can delightfully round off this breakfast with a small dollop of whipped cream – ideally flavoured with a little cardamom or cinnamon to aid digestion. In traditional Ayurvedic teachings, the combination of fruit and dairy products is generally avoided, as it is considered difficult to digest. So listen carefully to your body and enjoy your food mindfully.
