Tender lamb's lettuce with marigold blossoms and walnut-ginger dressing

Arrange the lamb's lettuce in bowls, sprinkle with fresh marigold petals and chopped walnuts. Serve with the dressing.

When shopping, please make sure the lamb’s lettuce isn’t wilted. To ensure the lettuce is as fresh as possible, it’s best to wash it under cold water. Then dry it carefully with a kitchen towel.

Lamb’s lettuce is rich in vitamin A, iron and calcium. It stimulates the appetite, and its leaves, which are rich in chlorophyll, infuse the cells with prana (the subtle life force).

Ingredients for 2–3 people

  • 250 g lamb's lettuce
  • 1 tbsp walnuts, finely chopped
  • 4 tbsp walnut oil
  • 1 tsp cane sugar or shakara
  • Salt
  • 3 tbsp marigold petals
  • 1/2 tsp fresh ginger, peeled and finely chopped
  • 2 tsp lime juice
  • 2 tbsp walnuts, finely chopped
  • Black pepper
