Asafoetida, also known as asafetida or hing, is a popular spice whose numerous beneficial properties are documented in the “Astanga Hridaya”, one of the oldest Ayurvedic texts.
Because of its strong, intense aroma, it should be used very gently (less than a pinch). Asafoetida is an ideal alternative to onions and garlic, which are not used in Ayurvedic cooking.
Highly valued for its Vata-balancing properties, asafoetida is often used to enhance bean, curry, and dal dishes.
