Carnival Fritters with Coconut and Orange

preparation
Whip the cream with the sugar until semi-stiff. Gently fold in the spelt flour, chickpea flour, baking powder, turmeric, vanilla, the juice and zest of half an orange, and salt. Pour the batter into a cake tin (Ø 24 cm) and bake at 180 degrees for about 25 minutes. Leave the cake to cool (preferably overnight). Now crumble the cake into a large bowl. Bring the remaining orange juice, orange zest and apricot jam to the boil and pour over the cake crumbs. Add the cinnamon, cardamom and desiccated coconut, and mix everything together to form a soft mixture. If it seems too firm, add a little more apricot jam.
Shape the dough into balls the size of golf balls and roll them in desiccated coconut. Create ‘faces’ using any ingredients you like, e.g. coloured sugar pearls, chocolate drops, raisins or similar, and place a carnival cone or similar on top as a hat. This makes the little balls look not only incredibly cheerful, but also delicious enough to eat.

- 120 g raw cane sugar
- 30 g roasted chickpea flour
- ½ tsp turmeric
- a pinch of salt
- 3 tbsp desiccated coconut
- ¼ tsp cardamom
- desiccated coconut for coating
- Juice and zest of one orange
- 170 g spelt plain flour
- 4 tsp cream of tartar baking powder
- Natural vanilla (¼ tsp natural vanilla or 1 sachet of Bourbon vanilla)
- 3–4 tbsp apricot jam
- Juice of half an orange
- ½ tsp cinnamon
