Heavenly Cream "Shri Kandt"
For the yoghurt, take a large saucepan and hang a sieve inside it. Line the sieve with a clean tea towel. Then pour in the yoghurt and tie the cloth tightly with a ribbon. If possible, place a weight on top so that the whey can drain off as effectively as possible. Leave to stand overnight. By the next morning, the yoghurt will have a consistency similar to quark. In India, this recipe is also known as ‘suspended yoghurt’.
Pudding powder with 1/4 litre of sweet cream...
Mix the strained yoghurt thoroughly with the sugar, rose water, orange juice and lime juice until the sugar has dissolved. Then mix the yoghurt with the cooked custard and fold in the whipped cream, keeping a little aside for decoration.
This can be served with a “Sweet Valentina” strawberry sorbet or, as a variation, with raspberries.

- 500 yoghurt or, alternatively, sour cream
- 1/4 litre sweet cream
- 1 sachet of vanilla-flavoured custard powder
- juice of 1/2 an orange
- 1 tbsp vanilla sugar
- 100 g whipping cream
- 150–200 g brown sugar
- 1/4 litre water
- juice of 1/2 lime
- 4 pinches of saffron
- 1/2 tsp rose water
