Method for Melon Sorbet
Ingredients for 4 people
- 1 ripe Melon
- Juice of 2 Oranges
- 4 Ebsp brown sugar
- 1 tsp finely chopped ginger
- 4 pinches of cardamom
- 1 pinch of allspice
- Juice of 2 limes (lemons)
- 1 litre of water
- 4 tbsp finely ground sago
- 4 pinches of cinnamon
- 2 pinches of black pepper
- 2 pinches of dried mint
Method
In a deep saucepan, bring the water and sugar to the boil with the lid off and reduce by half. In the meantime, peel the melon, remove the seeds and cut into fine, bite-sized cubes or scoop out small balls. Place in a bowl and leave to marinate with a little sugar and lemon juice. Add the freshly squeezed lime and orange juice to the boiling sugar water, along with all the spices and freshly chopped ginger. When the citrus juices are added, foam will form. Carefully skim this off immediately with a slotted spoon.
Using a whisk, slowly stir in the ground sago over a medium heat and allow it to swell gradually. After five minutes, add the melon and mint and continue cooking for a further five minutes. Then transfer to a bowl and leave to cool. Serve the dessert in bowls with melon sorbet and kiwi cream sauce (see recipe). Mint leaves and slivers of almonds or pistachios make a suitable garnish.
