Shri Ganesha's Sweet Laddus
Melt the butter and ghee in a heavy-based pan over a low heat, then stir in the chickpea flour using a wooden spoon.
After 15 minutes of constant stirring, the flour should be toasted to the point where it gives off a nutty aroma. Now add the desiccated coconut, almonds and ground cardamom (or cassia). Toast for a further 2 minutes, mixing all the ingredients together thoroughly. Remove the pan from the heat, add the icing sugar (or sharkara sugar) and mix thoroughly. Use a fork to break up any lumps until you have a smooth mixture. Then set aside for a few minutes to cool.
Once the mixture has cooled enough to handle, moisten your hands and shape it into 12–15 walnut-sized balls.
Variation: You can also spread the mixture onto a baking tray and, once cooled, cut it into diamond shapes. Why not try chopped walnuts instead of almonds?
These sweets will keep in the fridge for at least 1 week.
Laddus reduce the Vata and Pitta doshas and increase Kapha.

- 2 tbsp desiccated coconut
- 1 tsp cassia or cardamom
- 150 g ghee
- 4 tbsp chopped almonds
- 250 g icing sugar (or shakara sugar)
