Autumn Shake with Apple, Pear & Honey
Apples, particularly the old garden varieties, are rich in important minerals such as potassium, which supports nerve and muscle metabolism. They are particularly high in vitamin C and pectin, which aids digestion. Although pears contain fewer minerals than apples, they are less acidic. This makes this combination a wholesome treat, even for those sensitive to acidity. By the way – the vitamins are found right just beneath the skin. That’s why you shouldn’t peel the fruit.
Method
Wash the apples and pears, remove the cores and, leaving the skin on, purée them finely in a food processor at high speed. Open the cardamom pods, remove the seeds and grind them finely in a mortar. Add a pinch of cardamom and a teaspoon of honey per glass, then purée again. If you prefer this delicious drink a little thinner, add organic apple juice to taste or a little water to reduce the acidity.
Enjoy at room temperature.
