Rice flake porridge
Ingredients for 2 people
- ½ litre whole milk (for Vata or Pitta constitutions, use ½ cream and ½ water; for Kapha constitutions, use ½ whole milk and ½ water)
- 2 tbsp raisins
- 1 tbsp organic almond milk or 4 blanched almonds, soaked overnight and puréed
- 3 pinches of ground cardamom
- 6 tbsp rice flakes
- 1 dried fig, chopped to a medium-fine consistency
- 2 pinches of ground cinnamon
- 1 tbsp ghee
Preparation
Preparation time: 20 minutes
Heat the milk in a deep saucepan and, over a low heat, stir in the rice flakes, stirring constantly. Add the ghee, spices, dried fruit and almonds. Continue cooking until a porridge forms (five to ten minutes). If you prefer a thinner consistency, add another cup of milk.
As alternatives, you can use any type of cereal flakes – although these will need to be cooked for longer than rice flakes – or freshly ground spelt, oats or wheat. You can also add other dried fruits of your choice to the porridge. Recommended spices include cinnamon, cloves, ginger and cinnamon, allspice, star anise, or saffron and cardamom.
