Ayurvedic Winter Menu

Our winter menu not only enchants the senses, it also supports Dosha balance. Celery ravioli, pan-fried herb flatbreads, aromatic basmati rice with toasted almonds, fruity pineapple-banana chutney, hearty chickpea dal, creamy pumpkin-brussels sprout curry, winter baked apple with spiced cream, and warming apple spiced punch. Ingredients for 4 servings each

  • ½ pineapple
  • 1 star anise
  • 4 cloves
  • 1 tsp turmeric
  • 1 banana
  • 4 tbsp water
  • 2 cm piece fresh ginger
  • 1 tsp cardamom
  • 5 prunes
  • 1 pinch salt

Preparation

Peel the pineapple and cut it into small cubes. Grate or finely chop the ginger. Roughly chop the prunes. Put all ingredients (except the banana) into a small saucepan and simmer gently for five minutes. Then add the chopped banana pieces and simmer for another five minutes until thick.
