Shri Ganesha's Sweet Laddus
Melt the butter and ghee in a heavy-bottomed pan over low heat, then stir in the chickpea flour with a wooden spoon.
After 15 minutes of constant stirring, the flour should be roasted enough to emit a nutty aroma. Now add the shredded coconut, almonds, and ground cardamom (or cassia). Roast for another 2 minutes, mixing all ingredients thoroughly. Remove the pan from the heat, add the powdered sugar (or Sharkara sugar), and mix thoroughly. Use a fork to break up any lumps until a smooth mixture is formed. Then set aside to cool for a few minutes.
When the mixture has cooled enough to handle, moisten your hands and form 12-15 walnut-sized balls.
Variation: You can also spread the mixture onto a baking sheet and cut it into diamond shapes after it cools. Also try chopped walnuts instead of almonds.
The confection will keep in the refrigerator for at least 1 week.
